Migration Process

I finally got the migration to work from an IMAP server to Mailenable. I am now trying to figure out what the process should be when I go live...

If I flip the MX record to the new MailEnable server, then all messages will try to go to the new server. But if the user has not yet logged into the ME server, there will be no account there and the message will be rejected.

If I wait to flip the MX record, but just have the users log into the new ME server - no new messages will arrive for the users.

What is the proper way to do this migration, assuming the user base may take a total of 2 weeks or more to all log into the new server?
